Switcharoo: 3-Berry Chia Jam

Every time I run out of jelly, jam or preserves, “A” and I have to start the hunt all over again for a replacement fruity spread with a reasonable sugar content. It’s a lot harder than it sounds. We could just go without but we’re Americans and not having the ingredients for a proper PB & J somehow seems un-American.

When I’ve looked up recipes in the past they seemed too complicated and involved. Which is the opposite of what I’m looking for in any recipe I’m looking up.

Recently, when I was exploring uses for Chia Seeds, I came across a few recipes that used the seeds to create a jam. Ding, ding, ding, we’ve got a winner! The idea of using real ingredients, no added sugar and an ingredient that would add fiber, protein, calcium, antioxidants and Omega-3s to something that is historically sugar rich was exactly what I was looking for.

I used this recipe and modified by using a medley of frozen blueberries, blackberries and raspberries. It came out so good and was ready in no time. Try it, you won’t be sorry.

TRIPLE BERRY CHIA JAM

Ingredients:
1 cup frozen berry medley
1 tablespoon raw honey
1/2 lemon
2 tablespoons chia seeds

Instructions:

– Add berries, lemon juice and honey to a small sauce pan on low heat. Heat until well              incorporated, smashing the berries while mixing.

– Remove from heat and add chia seeds. Mix well to evenly distribute.

–  Pour into a container with a tight seal and refrigerate for 1 hour, allowing the jam to set.

– Serve with your favorite bread and nut butter, or like I did here, spread on a crepe for a         mid-day treat. Enjoy!
